Famous Scones:
1 1/2 cups white flour
1/2 cup whole wheat
flour
4 tsp. baking powder
1/4 cup sugar
1/2 tsp. salt
1/2 cup dried apricots
coarsely chopped
1/4 cup diced cold margarine
1 egg
2/3 cup milk
Directions: Preheat
oven to 350 degrees. Combine dry ingredients. Cut in margarine and add
apricots. Combine egg and milk. Make well in dry ingredients. Add
combined egg and milk mixture. Mix just until the flour is all combined.
Spray cookie sheet with oil. Drop dough by spoonfuls onto cookie
sheet. Sprinkle with sugar. Cook 15-20 minutes until nicely browned
on top.
Tip: Oven must be
pre-heated or scones will burn on the bottom before they brown.
